We wanted something to drink with bacon and eggs, or chicken and waffles. It needs enough acidity to cut through the fats, and plenty of body to stand up to the savory and salty flavors of breakfast. But also something enjoyable in the early hours before plates make it to the table. Something Waits and Pop would still be up drinking when you’re about to pour your first cup for the day. Something that didn’t need doctoring. But then again, we love cream and sugar too.
Succinctly, you can take it however you like, knowing it likes you just the way you are. Similar to Tim Taylor’s neighbor Wilson, “Hello, Neighbor.” is always there for you with more than meets the eye. We put in our work so you don’t have to.
