Don Cigarillo: Anaerobic Pacamara – El Salvador


This special collaboration between West Oak and Finca Colomba has proven to be the cream of this year’s crop.  The earthiness native to the Pacamara variety is downplayed in anaerobic fermentation, yielding an elegant, full-bodied and fruit-forward cup.   Big notes of blackberry and baker’s chocolate overwhelm quickly finishing with winey notes of apple, similar to Rosè or Riesling.
