¡Viva Don Yon! – El Salvador

Named for the late Don Yon, this limited estate variety was released in his honor. Medium body, with a silky red wine mouthfeel, notes of raspberry with a cacao finish and vanilla cake like sweetness.
From our producers at Calera in El Salvador, a sister farm to Cafe Colomba. This farms overseer, Samuel, is also known as El Lobo (or “the Wolf”) because he prefers to farm at night. This particular lot was specially dedicated to Uncle Juan, or Don Yon, who passed recently. It is a fine coffee to commemorate his passing because, as you may notice, the subtle tasting notes of red wine and birthday cake are celebratory flavors. We used this in our regional Coffee in Good Spirits competition, placing third… yet another reason to celebrate. The fun part about this lot is that it is of unknown variety. Our best guess is a breed between bourbon and a Kenyan variety (perhaps Ruiru 11). Either way, we’ve enjoyed its fruit forward and complex nature embedded in the comforting balance of something akin to a breakfast blend. We highly recommend as a filter brew or espresso. We prefer it as espresso. As we sip, we notice an unshakable feeling of luxury overcome us as if we were celebrating with the Great Gatsby himself.
