Basha Bekele on his farm in Sidama, Ethiopia, employs 86 seasonal employees to hand-pick, transport, sort, and sun-dry coffee cherries. They are then dry milled locally in Daye town and kept separate to preserve the rare treat of single estate Ethiopian coffee, leading to an overall cleaner, smoother cup.
